牛排爱好者注意:今天开始Sobey's 的Sterling Silver AAA级Strip loin和prime rib特价$5.99/lb。这个牛排质量很好,比costco便宜,而且好。Costco的strip loin买过一次,发现是注水肉,以后再也不买了 (水城百事)

肉表面水汪汪的,摸上去有浮水,放纸上去会湿透.我估计是他们加工过程中用水了。好的牛排要用风,不能用水

一般人买肉有一个很大的误区,就是认为越红越好。实际上好的牛排应该是有均匀的网状脂肪(雪花),雪花多而且匀的是上品,通红的那是木头不是肉。Strip loin做牛排最好,因为没有骨头,还可以直接炒着吃,绝不会老

最中国的吃法:切薄片,炒泡椒牛柳,不要放嫩肉粉或其他东西。比较西式吃法:撒上一点粗盐粒,烧烤。比较简单吃法:抹上Clubhouse那个Montreal Steak牛排酱,用烤箱的Grill功能烤

如果是红烧排骨可以。如果是上火烤或者烟熏的,不能洗。很多烤排骨的(估计rib fest里面有)是先煮熟再烤。这是为了省事,说白了就是在买烧烤酱,而不是在卖烤肉

直接烤,不要风干。牛排店里的牛排经常都是age过。就是把牛肉挂在0度60%左右湿度的仓库里放四个星期左右。然后把表面的干肉片掉,中间的肉做牛排

这个牛排经常这么减价,我怀疑这就是正常价格。华西村附近的那个店非常差,广告上的东西经常没有。最喜欢Ira Needles上的那家,又大东西又全。
